Frozen Waldorf Salad

This is wonderful recipe.  Enjoy.

1 cup heavy whipping cream - whipped
1 lb 4 oz can crushed pineapple
3 eggs lightly beaten
3/4 cup sugar
1/3 cup lemon juice
1/4 teaspoon salt
3/4 cup diced celery
3 medium apples - diced
3/4 cup chopped nuts

Drain pineapple and reserve 3/4 cup of juice.

In saucepan, combine pineapple juice, eggs, sugar, lemon juice, and salt.  Cook over low heat until thickened. Remove from heat.

Add pineapple, celery, apples, and nuts.

Fold in whipped cream

Pour into tray and place in freezer.

(Will be good for up to 1 month)
